Cilantro Lime Chicken Meatballs


  • 2 tbsp extra virgin olive oil
  • 1 lb ground chicken
  • 1/2 small-medium red onion diced
  • 3 fresh garlic cloves minced
  • 1/2 cup fresh cilantro finely chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • juice from one lime


  1. Preheat the oven to 400 degrees F.

  2. Dice 1/2 of a red onion, mince the garlic and chop fresh cilantro and add to the bowl with ground chicken.

  3. Add the salt and pepper and juice from one lime.

  4. Stir (I use my hands) all of the ingredients together until well combined and then form into 1-2 inch meatballs. I usually get about 11-12 meatballs. 

  5. Add 2 tablespoons of extra virgin olive oil to a cast iron pan on medium high heat. 

  6. Cook the meatballs in the cast iron pan for 1-2 minutes and then flip to the other side for another 1-2 minutes until golden brown on the outside. 

  7. Pop into the oven for 12-15 minutes until cooked all the way through. 

  8. Garnish with fresh cilantro and squeeze of lime juice and enjoy!

Recipe Notes

Adjust the amount of garlic to your taste. You could also use garlic powder or jarred minced garlic in place of fresh.
